About this product
The black eight-inch square is what pastry and cold-kitchen sections reach for when a dish is pale: panna cotta, a ceviche, burrata, anything that needs a dark surround to be legible from standing height. Its 7/8 inch rise holds a dressing or a syrup in place.
Dimensionally it is identical to the white RM-108, so a room can run both and switch by course rather than by table. Eight inches takes a starter or a dessert without the plate reading as a main. Melamine construction means it goes through the dish machine alongside the darker service. Four dozen to the case.
