Twenty-six ounces in a seven-inch round with a two-and-three-quarter-inch wall. The proportions are deliberately open rather than deep, which gives a plated bowl room to show its toppings instead of burying them. For a lunch ramen, a single portion of noodles and broth leaves a clean margin of rim above the surface.

On a black field a soft-boiled egg, a sheet of nori and a scatter of scallion carry far more contrast than they do in a white bowl, which is why dark hollowware became the house standard for ramen. Practically, the dark interior also conceals the oil ring a fatty broth leaves at the waterline. Brown on the outside stops the bowl merging into a dark wood table at the edges.
