Twenty-eight ounces in a six-and-a-half-inch round with three inches of wall. The deep narrow profile is built for broth: the surface area is small for the volume, so a bowl of noodles gives up its heat slowly, and a diner can work through it without the last third going tepid. A single-serve portion of ramen, pho or udon fits with the broth clear of the rim.

A black well is the conventional choice for a noodle service, and not for appearance alone — tare, chilli oil and soy-based broths leave a tide line in pale melamine that no wash cycle quite removes.
