The larger of the two Champs salad plates, 8-1/2 inches across against the 7-1/4 inch round, which is roughly a third more surface for the same footprint on a shelf. A full inch of rise carries a wetter plate than the smaller round will, so warm starters and saucy small plates stay where they are put.
This is the diameter many operators use as a lunch plate: a sandwich with a side, a grain bowl turned out flat, a half portion of pasta. It also doubles as an under-plate for the CH-405 and CH-406 bowls when a soup course goes out. Two dozen to a case suits a kitchen that rotates the size through several menu positions.
