Eighteen inches holds a whole poached salmon, a carved roast with garnish, or four rows of canapes, and the shallow seven-eighths-inch body means nothing is hidden behind a rim. The white is flat and uniform, so platters bought a year apart still match on the same table. Melamine keeps the weight down for staff lifting a full station rack, and a platter that goes over will not shatter.
