Its proportions are deliberately squat: a wide floor gives staff room to toss and dress in the salad bowl itself rather than transferring from a mixing basin. Stone Art's concrete gray speckle makes a bright salad read well against a muted ground, which is why the finish turns up so often on photographed menus.
