The deeper recess suits a dessert that comes with more liquid than a coulis: poached pears in their syrup, a fruit compote, a trifle portion, or a warm pudding with custard poured at the table.
The protected dessert name keeps this a plate at this width, and in practice it is used that way, set in front of one diner with the surround carrying the garnish. Melamine at this size is a practical choice for a dessert section plating at pace, because the piece will not crack when it is set down hard on a pass.
