Depth runs to one and a quarter inches, so dressed leaves and loose grains stay put rather than sliding over the lip. The thick rim that defines the range doubles as a grip point for servers working a crowded pass, and the square face lines up square on a tray. Four dozen ship per carton, matching the pack on the smaller side plate and reflecting how many a salad station keeps in rotation through a long service.
