A rim soup plate is not a bowl with a lip bolted on. The BR-3 measures nine inches overall and just 1-3/4 inches deep, so the ten ounces it holds spread wide and shallow across the well rather than stacking up in a column. Broth cools to an eating temperature faster, and a wide well shows off what is in the soup instead of hiding it.
The flat rim is the functional part. It gives a server somewhere to put a thumb, it takes a soup spoon laid across it between mouthfuls, and it lets the plate be carried on a tray without the contents reaching the edge. Two dozen to the case matches the way soup is actually ordered in a full-service room, where a soup course goes out alongside the entree rather than instead of it.
