Eight ounces in a five-inch round keeps the food close to the surface, which is what a salad wants when the garnish is part of the plate. The same shape takes a side of coleslaw, a fruit cup, or a small dessert. Think of it as the open counterpart to the Agate rice bowl, which packs an identical volume into a narrower, deeper form.
