The coupe profile keeps a dressing from running off while leaving the whole surface usable. Melamine suits a plate of this size: it leaves the dishwasher warm and dry, it does not craze, and a dropped one carries on working. Forty-eight to a case is a sensible holding quantity for a café running two seatings a day.
